A typical Italian food – Fried Pizza – Original recipe of Neapolitan Master Gino Sorbillo.

Ingredients
 

For the base of the pizza:
300 gr of water
500 gr of flour 0 enrich with germs of grain
15 of salt
2 gr of brewer’s yeast
 
For the condiment:
Endive
Anchovies sauce traditionally produced to Menaica
2 spoon of bio olive pate of Puglia
Smoked provola
Peanut oil for fried
 
Execution
Mix  the flour and the water where, before, we must dissolve 2 gr of brewer’s yeast; add the salt and knead for 15 minutes. We will obtain a loaf of about 800 gr. Divide it in shorter loaf of 80 – 100 gr. Extend every loaf and put in the middle the smoked provola, the olive pate, the endive and the anchovies sauce and the smoked provola again; put on another extended loaf, and seal the border with the punches (on the both parts). Warm up the oil at 220° and put inside the pizza and let it cook until the gilding. Put the boiling oil under the pizza.
